- 1 whole chicken, about 2 kg
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme leaves
- 100 g green olives, pitted and halved
Preheat oven to 200°C (400°F). Place the chicken in a roasting pan. Rub the olive oil over the chicken and season with salt and pepper. Scatter the onion, garlic and thyme leaves around the chicken. Arrange the olives on top of the chicken. Roast in preheated oven for 1 hour or until cooked through.
