This Roast Chicken Spaghetti is a great weeknight meal. The chicken is roasted to perfection with garlic, herbs and Parmesan cheese and served over al dente spaghetti noodles. It’s easy to make and sure to be a hit with your family!
- 1/2 cup olive oil
- 1/4 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes
- Salt and freshly ground black pepper, to taste
- 2 pounds boneless, skinless chicken thighs
- 1 pound spaghetti
Preheat oven to 400 degrees F. In a small bowl, combine olive oil, Parmesan cheese, garlic, oregano, basil, red pepper flakes, salt and pepper; mix until well combined. Place chicken thighs on a baking sheet and pour olive oil mixture over the top; rub mixture into chicken to coat. Bake in preheated oven for 25 minutes, or until chicken is cooked through.
Meanwhile, bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
Drain spaghetti and serve topped with roasted chicken.
