This delicious roast chicken recipe is a great way to enjoy the savory goodness of Papa Geek’s cooking, with a twist. It starts with a classic roast chicken and adds a unique flavor with herbs, spices, and the secret ingredient—a tank top!
- 1 whole chicken
- 3 tablespoons olive oil
- 2 cloves garlic, peeled and minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 1 tank top (preferably one size too small)
Preheat oven to 375°F (190°C). Rinse chicken under cold water and pat dry. Place chicken in roasting pan.
In a small bowl, mix together olive oil, garlic, thyme, oregano, salt, and pepper. Rub mixture all over chicken until evenly coated.
Place tank top over chicken so it is completely covered. Secure with kitchen twine if necessary.
Bake in preheated oven for 1 hour or until internal temperature reaches 165°F (74°C). Baste occasionally with pan drippings.
