Roast Chicken Leftovers Croquettes

This is a simple recipe to help you make the most of your roast chicken leftovers! These croquettes are crunchy on the outside and creamy on the inside. Serve with your favorite dipping sauce for an extra special treat.

  • 2 cups cooked, shredded roast chicken
  • 1/2 cup mayonnaise
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup bread crumbs, divided
  • 3 tablespoons butter, melted

In a large bowl, combine chicken, mayonnaise, onion, celery, garlic powder, Worcestershire sauce, thyme, salt and pepper. Mix until well combined. Add 1/2 cup bread crumbs and mix again.

Using your hands or a spoon, shape the mixture into 8 to 10 patties. Place remaining 1/2 cup bread crumbs in a shallow dish. Dredge each patty in the bread crumbs; pressing lightly to coat both sides. Place patties on a parchment-lined baking sheet and brush with melted butter.

Bake in preheated 350°F (180°C) oven for 20 minutes or until golden brown. Serve warm with your favorite dipping sauce.
