This Rice Cantonese is a delicious combination of chicken, rice and soy sauce, perfect for a tasty dinner. The recipe is quick and easy to make, so you can enjoy it in no time.
- 2 tablespoons olive oil
- 250g chicken breast, cut into cubes
- 1 onion, chopped
- 200g basmati rice
- 400ml chicken stock
- 3 tablespoons soy sauce
Heat the oil in a pan over medium heat. Add the chicken cubes and cook for 10 minutes until lightly browned. Add the chopped onion and cook for a further 5 minutes until softened. Add the basmati rice and stir to coat in the oil.
Pour in the chicken stock and soy sauce, stirring to mix everything together. Bring to a boil then reduce the heat to low. Cover with a lid and simmer for 15 minutes or until all of the liquid has been absorbed.
Serve hot with your favourite vegetables.
