This is a delicious and easy to make Rice Cantonese dish with chicken and soy sauce. It’s perfect as an accompaniment to a main meal, or as a tasty snack. The best part is that it can be made in under 30 minutes!
- 1 cup of long grain white rice
- 3 cups of chicken broth
- 2 tablespoons of vegetable oil
- 1/2 cup of diced onion
- 1/4 cup of diced green bell pepper
- 1/4 cup of diced red bell pepper
- 2 cloves of minced garlic
- 2 boneless skinless chicken breasts, diced
- 1/4 cup of soy sauce
- 2 tablespoons of dry sherry (optional)
In a medium saucepan, heat the oil over medium-high heat. Add the onion, green and red bell peppers, and garlic and cook until softened, about 5 minutes. Add the chicken and cook until no longer pink, about 5 more minutes.
Add the rice and stir to coat with the vegetables. Add the chicken broth and soy sauce and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
If desired, stir in the sherry at this point. Serve hot.
