This delicious pumpkin pasta dish is the perfect way to warm up on a chilly autumn evening. The creamy pumpkin sauce is a great compliment to the earthy flavor of the pasta, making it a truly unique and flavorful meal.
- 1 lb. of Penne Pasta
- 2 tablespoons of Olive Oil
- 1 Onion, finely chopped
- 3 cloves of Garlic, crushed
- 2 cups of Pumpkin Puree
- 1/4 cup of White Wine
- 1 teaspoon of Sage, chopped
- Salt and Pepper to taste
In a large pot over medium-high heat, heat the olive oil. Add the onion and garlic and cook until softened. Add the pumpkin puree, white wine, sage, salt and pepper and stir to combine. Reduce heat to low and simmer for 10 minutes.
Meanwhile, bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente (about 10 minutes). Drain the pasta and return it to the pot.
Pour the pumpkin sauce over the cooked pasta and toss to coat. Serve immediately.
