Poulet fermier au crémant d’Alsace

This mouthwatering dish of Poulet Fermier au Crémant d’Alsace is the perfect combination of succulent chicken and crisp, dry sparkling wine. The combination of flavours makes it a fantastic accompaniment to any meal. To make this classic French dish, you will need:

  • 1 whole chicken, cut into 8 pieces
  • 1 bottle of Crémant d’Alsace sparkling wine
  • 4 tablespoons butter
  • 2 cups sliced onions
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Begin by preheating your oven to 375°F. Melt the butter in a large skillet over medium-high heat. Add the chicken pieces and cook until lightly browned on both sides. Remove from the skillet and transfer to a roasting pan.

Add the onions, garlic and thyme to the skillet and cook until softened. Pour the mixture over the chicken in the roasting pan. Pour in enough of the Crémant d’Alsace to just cover the bottom of the pan. Sprinkle with salt and pepper.

Cover with aluminum foil and bake for 1 hour or until chicken is cooked through. Uncover and bake for an additional 15 minutes or until sauce is lightly browned. Serve warm with a glass of Crémant d’Alsace.
