- 1 pound boneless, skinless chicken thighs
- 1/2 pound chorizo sliced into 1/4 inch pieces
- 1 onion diced
- 1 red bell pepper diced
- 2 cloves garlic minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin powder
- 1 teaspoon oregano
- 1/4 cup white wine
- 2 tablespoons olive oil
Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until golden brown on both sides, about 10 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chorizo slices and cook until lightly browned, about 5 minutes. Add in the diced onion, red bell pepper, garlic and spices. Cook for another 5 minutes until vegetables are softened.
Add the chicken back to the skillet along with the white wine. Reduce heat to low and cover with a lid. Simmer gently for 15-20 minutes until chicken is cooked through.
