This delicious dish is made with succulent chicken drumsticks and a flavorful ratatouille sauce. With just a few simple ingredients, you can enjoy this classic French dish in no time!
- 4 large chicken drumsticks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup canned crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Preheat the oven to 375 degrees Fahrenheit. Place the chicken drumsticks on a baking sheet lined with parchment paper. Brush each drumstick with olive oil and season with salt and pepper. Bake for 25 minutes.
Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat. Add the bell peppers, onion, and garlic and sauté until softened, about 5 minutes. Add the tomato paste and cook for 2 minutes more.
Stir in the crushed tomatoes, oregano, and thyme. Bring to a simmer and cook for 8 minutes or until the sauce has thickened. Remove from heat.
Remove the chicken from the oven and place on a serving platter. Top with the ratatouille sauce and serve warm.
