Pear and Spice Jelly – Perfect for Christmas Foie Gras

This Pear and Spice Jelly is the perfect accompaniment to any festive foie gras. The combination of sweet pears with spices like cinnamon and nutmeg make this a delicious, indulgent treat that is sure to be a crowd-pleaser.

To make it, you will need:

  • 4 pears, peeled and cored
  • 2 cups sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Begin by placing the pears in a large saucepan over medium heat. Cook until they are soft and beginning to break down, about 8-10 minutes. Add the sugar, lemon juice, cinnamon, and nutmeg. Bring to a boil, stirring occasionally. Reduce the heat to low and simmer for 20 minutes, stirring frequently.

Remove from the heat and allow to cool slightly before transferring to a blender or food processor. Blend until smooth. Pour the mixture into a fine-mesh sieve set over a bowl and press through with a spoon or rubber spatula.

Pour the jelly into sterilized jars and seal tightly. Store in the refrigerator for up to 2 weeks.
