This Pavlova Christmas Wreath is the perfect way to end a festive meal. The crunchy and sweet meringue wreath is filled with cream, seasonal fruits, and a dusting of icing sugar for a beautiful presentation.
- 4 large egg whites
- 1 cup of white sugar
- 1 teaspoon of white vinegar
- 1 teaspoon of cornstarch
- 1 teaspoon of vanilla extract
- 2 ½ cups of heavy whipping cream
- ¼ cup of powdered sugar
- 2 tablespoons of brandy or rum (optional)
- Assorted seasonal fruit (such as strawberries, kiwi, blueberries, raspberries, etc.)
- Icing sugar for dusting (optional)
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a large bowl, beat egg whites until stiff peaks form. Add in the sugar one tablespoon at a time, beating until glossy. Add in the vinegar, cornstarch, and vanilla extract and mix to combine. Spread the mixture onto the baking sheet in an even layer.
Bake for 1 hour and 15 minutes or until lightly golden brown. Turn off heat and allow meringue to cool completely in the oven.
In a medium bowl, beat cream with an electric mixer until soft peaks form. Add in the powdered sugar and brandy or rum (if using) and mix until combined.
When meringue is completely cool, spread whipped cream over top. Arrange assorted fruit on top as desired. Dust with icing sugar if desired.
Serve immediately or store in refrigerator until ready to serve.
