This simple pasta dish is packed full of flavour, thanks to the combination of succulent chicken and sweet cherry tomatoes. It’s a great way to spruce up your pasta night!
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 boneless skinless chicken breasts, cubed
- Salt and pepper, to taste
- 1/4 teaspoon Italian seasoning
- 3 tablespoons tomato paste
- 3/4 cup chicken broth
- 1 pint cherry tomatoes, halved
- 8 ounces penne pasta
- 1/4 cup freshly grated Parmesan cheese
Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the cubed chicken, season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 8-10 minutes.
Stir in the tomato paste and chicken broth. Bring to a simmer and cook for 2-3 minutes. Add the cherry tomatoes and cook for another 2 minutes.
Meanwhile, cook the penne according to package instructions; drain well.
Add the cooked penne to the skillet with the sauce. Stir in the Parmesan cheese. Serve immediately.
