This delicious and easy-to-make pasta salad is perfect for a picnic, lunch, or dinner. It’s made with cooked chicken, penne pasta, celery, tomatoes, and a creamy dressing.
- 1 lb (450 g) cooked chicken, diced
- 8 oz (225 g) uncooked penne pasta
- 1/2 cup (75 g) diced celery
- 2 tomatoes, seeded and diced
- 1/2 cup (125 ml) mayonnaise
- 2 tablespoons (30 ml) white wine vinegar
- 1 teaspoon (5 ml) dried oregano
- Salt and pepper to taste
In a large bowl, combine the chicken, pasta, celery and tomatoes. In a separate bowl, mix together the mayonnaise, vinegar and oregano. Add the dressing to the salad and mix well. Season to taste with salt and pepper.
Serve chilled or at room temperature.
