Pasta Chicken Salad

This delicious pasta chicken salad is a perfect lunch or light dinner. It’s easy to make, full of flavor and extremely filling. You can make it in just 20 minutes and it’s sure to be a hit with the family.

  • 8 ounces dried rotini pasta
  • 2 boneless, skinless chicken breasts, cooked and cubed
  • 1/2 cup red onion, diced
  • 1/3 cup celery, diced
  • 1/4 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Bring a large pot of lightly salted water to a boil. Add the rotini pasta and cook according to the package instructions. Drain, rinse with cold water and set aside.

In a large bowl, combine the chicken, red onion, celery, mayonnaise, Dijon mustard, apple cider vinegar, garlic powder and salt and pepper. Add the cooked pasta and mix until everything is well combined.

Refrigerate for at least one hour before serving.
