This is a delicious recipe for Parmentier with Chicken Leftovers in Broth. It’s the perfect way to use up any leftover chicken you may have!
- 2 cups diced cooked chicken
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/4 teaspoon paprika
- 2 cups chicken broth
- 2 cups mashed potatoes
- 1/4 cup Parmesan cheese, grated
Preheat the oven to 375 degrees F. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the thyme and paprika and stir to combine. Add the chicken and cook for another minute or two. Pour in the chicken broth and bring to a simmer. Reduce the heat to low and let it simmer for 10 minutes.
In a medium bowl, combine the mashed potatoes with the Parmesan cheese. Spread half of the potato mixture on the bottom of a 9×13 inch baking dish. Top with the chicken mixture, then spread the remaining potato mixture on top.
Bake in preheated oven for 25 minutes, until golden brown and bubbly. Serve hot.
