This delicious panini is an easy and tasty way to enjoy a quick meal. Made with chicken, curry and a few other ingredients, this panini will be sure to please even the pickiest of eaters.
- 2 boneless, skinless chicken breasts
- 1 tablespoon curry powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices of sourdough bread
- 4 slices of Swiss cheese
- 1/4 cup mayonnaise
Heat the olive oil in a skillet over medium-high heat. Season the chicken breasts with salt, pepper and curry powder. Add the chicken breasts to the skillet and cook until they are cooked through, about 4 minutes per side. Remove from heat and let cool.
Spread each slice of bread with mayonnaise. Place 1 slice of Swiss cheese on each piece of bread. Slice the cooled chicken breasts into thin strips and layer them onto two of the slices of bread. Top with remaining slices of cheese and cover with remaining pieces of bread.
Heat a large skillet over medium-high heat. Place sandwiches in skillet and press down lightly with a spatula. Cook for 2 minutes per side or until cheese is melted and bread is golden brown.
