Pan-Fried Chickpeas with Eggplant, Chicken, and Chorizo

This flavourful one-pan dish is a perfect dinner for entertaining. It’s packed with protein and vegetables, so it’s healthy as well as delicious. The combination of eggplant, chicken, chorizo, and chickpeas makes for a wonderful balance of flavours. Serve with a side of crusty bread or some boiled potatoes for a complete meal.

  • 1/4 cup olive oil
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 large eggplant, diced
  • 1/2 pound cubed chicken breast
  • 3 ounces chorizo sausage, diced
  • 3 cups cooked chickpeas (or canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. Add the eggplant and cook until lightly browned, about 8 minutes. Add the chicken, chorizo, chickpeas, tomato paste, cumin, salt and pepper. Cook until everything is heated through and the chicken is cooked through, about 10 minutes.
