This flavourful one-pan dish is a perfect dinner for entertaining. It’s packed with protein and vegetables, so it’s healthy as well as delicious. - 1/4 cup olive oil
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 large eggplant, diced
- 1/2 pound cubed chicken breast
- 3 ounces chorizo sausage, diced
- 3 cups cooked chickpeas (or canned)
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- Salt and pepper to taste
Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. Add the eggplant and cook until lightly browned, about 8 minutes. Add the chicken, chorizo, chickpeas, tomato paste, cumin, salt and pepper. Cook until everything is heated through and the chicken is cooked through, about 10 minutes.
