This Omelette Surprise Wrap is a delicious and simple meal that can be vegan or non-vegan. It’s perfect for a quick lunch or dinner. Enjoy!
- 1 tortilla wrap (either vegan or non-vegan)
- 2 eggs (or 2 tablespoons of vegan egg mix for vegan wraps)
- 1/4 onion, diced
- 1/4 bell pepper, diced
- 1/4 cup mushrooms, diced
- 2 tablespoons shredded cheese (for non-vegan wrap only)
- Salt and pepper to taste
In a medium bowl, whisk together the eggs (or vegan egg mix). In a small skillet, heat some oil over medium heat. Add the onion, bell pepper, and mushrooms. Saute until softened and season with salt and pepper to taste. Add the egg mixture to the skillet and stir to combine.
Cook until eggs are almost set, then add shredded cheese (for non-vegan wrap) and fold over one side of the egg mixture. Cook until cheese is melted and eggs are fully cooked. Place the egg mixture into the center of the wrap. Fold up the sides of the wrap to secure the filling.
Serve warm with your favorite condiments.
