Omelette de pommes de terre au poulet- oignon- olives – cuisson au four ou à la poêle

This savory omelet is a perfect breakfast, brunch or dinner meal. It’s made with potatoes, chicken, onion, and olives, and can be cooked either in the oven or on the stovetop.

  • 1/2 lb. potatoes, diced
  • 1/4 cup diced onion
  • 1/4 cup pitted and chopped olives
  • 1/4 cup cooked chicken, shredded or cubed
  • 3 eggs
  • Salt and pepper to taste

Preheat oven to 375°F (190°C). Grease an 8-inch (20 cm) skillet or baking dish. Place the potatoes in the pan and bake for 10 minutes. Add onion and olives and bake for another 10 minutes. In a bowl, beat together eggs and season with salt and pepper. Pour over potatoes in pan. Top with chicken pieces. Bake for 20 minutes until set.
