Moroccan Chicken Tajine with Vegetables

This Moroccan chicken tajine with vegetables is an easy and delicious dish to make. It’s a great way to use up any vegetables you have lying around, and it can be served as a main course or side dish. To make this dish, you’ll need chicken, onion, garlic, tomatoes, carrots, potatoes, bell peppers, olives, raisins, cumin, coriander, turmeric and saffron.

Start by heating some oil in a large pan over medium heat. Once the oil is hot add the onions and garlic and cook for about 3-4 minutes until softened. Then add the chicken and cook for another 5 minutes until lightly browned. Add the tomatoes, carrots, potatoes and bell peppers to the pan along with the olives and raisins.

Next add the spices – cumin, coriander, turmeric and saffron – and stir to combine everything. Cover the pan with a lid and reduce heat to low. Let the tajine cook for 30-40 minutes until all of the vegetables are tender.

Serve your Moroccan chicken tajine with some couscous or rice for a complete meal.
