This mini chestnut soup is a creamy, comforting and easy-to-make meal. It’s a great starter for any festive dinner or even as a decadent snack!
- 2 tablespoons butter
- 1 onion, chopped
- 3 cups cooked chestnuts, diced
- 4 cups chicken broth
- 1/2 teaspoon thyme
- Salt and pepper to taste
Melt the butter in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the chestnuts, chicken broth, and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
Carefully transfer the soup to a blender and puree until smooth. Taste and adjust seasoning with salt and pepper. Serve warm.
