Marinated Chicken Skewers with Paprika Yogurt

These marinated chicken skewers with paprika yogurt are a delicious and flavorful dish, perfect for barbecues or any outdoor gathering. The marinade is simple and easy to prepare, and the result is a juicy and tasty chicken that will certainly be a hit with your friends and family.

  • 2 lbs chicken thighs, cut into cubes
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 2 tablespoons freshly chopped parsley leaves

In a large bowl, combine the olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Add the cubed chicken to the bowl and mix well to coat. Cover the bowl and place in the refrigerator for at least 2 hours.

Once the chicken has marinated, preheat your grill to medium-high heat. Thread the cubes onto skewers (soak wooden skewers in water for 10 minutes before using). Grill the skewers for 8-10 minutes until cooked through, flipping halfway through.

Meanwhile, in a small bowl mix together the yogurt with some of the leftover marinade. Stir in freshly chopped parsley leaves.

Serve the grilled chicken skewers with the paprika yogurt sauce.
