- 6 sheets of Nori seaweed
- 3 cups of sushi rice
- 1/2 cup of rice vinegar
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 4 ounces of smoked salmon, thinly sliced
- 1/4 cup of mayonnaise
- 2 tablespoons of chopped chives
In a saucepan, bring the water to a boil. Add the rice and cook for about 15 minutes until the rice is cooked through. Drain the rice in a colander and set aside.
In a small bowl, mix together the vinegar, sugar, and salt until dissolved. Pour over the cooked rice and mix together with a wooden spoon until all the grains are evenly coated. Allow the rice to cool completely.
Lay out one sheet of Nori on a sushi rolling mat. Wet your hands with cold water and spread 1/2 cup of cooked rice over the entire sheet, leaving 1/2 inch border at the top edge. Arrange slices of smoked salmon at the center of the sheet.
In another small bowl, mix together mayonnaise and chives. Spread this mixture over the smoked salmon slices.
Lift up one end of the rolling mat and fold it over the filling, pressing down lightly. Continue rolling up until you reach the top edge. Seal with a bit of water.
Cut each roll into 8 pieces using a sharp knife dipped in cold water.
Serve with soy sauce and pickled ginger.
