Low Temperature Roasted Chicken and Potatoes

This easy and delicious recipe combines two classic flavors – chicken and potatoes – roasted in the oven at a low temperature. The result is juicy, flavorful chicken with tender, golden potatoes that make a perfect meal.

  • 4 tablespoons olive oil
  • 1 tablespoon finely chopped garlic
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 pounds skinless, boneless chicken breasts (or thighs, if preferred)
  • 2 pounds small red potatoes, halved

Preheat the oven to 275 degrees F (135 degrees C). Line a large baking sheet with parchment paper.

In a bowl, mix together the olive oil, garlic, salt and pepper. Add the chicken and potatoes and toss to coat in the oil mixture.

Arrange the chicken and potatoes on the prepared baking sheet. Bake in preheated oven for 45 minutes to 1 hour, or until chicken is cooked through and potatoes are tender.

Serve hot.
