Lemon Meringue Yule Log

This Lemon Meringue Yule Log is a classic holiday dessert that is surprisingly easy to make. It’s light, zesty and has a delicious meringue topping. The perfect end to any festive meal!


  • 4 large eggs
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 lemon, zested and juiced
  • 1/4 teaspoon salt

Meringue Topping:

  • 4 egg whites
  • 1/2 cup granulated sugar


  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the eggs and sugar until well blended.
  3. Add in the flour, cornstarch, baking powder, lemon zest, lemon juice and salt and whisk until completely incorporated.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for 20 minutes or until lightly golden brown.
  5. < li>Once the cake is done baking let it cool slightly before transferring it to a cutting board.< li >With a sharp knife cut the cake into three even pieces lengthwise.< li >To assemble the yule log place one piece of cake onto your serving plate. Spread ⅓ of the meringue over the top of this layer then top with another layer of cake.< li >Spread another ⅓ of the meringue over this layer then top with the final piece of cake.< li >Spread the remaining meringue over top and sides of the cake then use a fork to create little peaks in the meringue.< li >Bake for an additional 15 minutes or until lightly golden brown on top.< li >Let cool completely before serving. Enjoy!
