Lemon Chicken Bites

These lemon chicken bites are a perfect combination of sweet and tangy flavors. The juicy chicken is marinated in a mixture of lemon juice, garlic, and herbs, before being baked until golden brown. Serve it with a side of your favorite vegetables for an easy weeknight meal.

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preheat oven to 375°F (190°C). Cut the chicken into 1-inch cubes and place them in a large bowl. In a separate bowl, whisk together the lemon juice, garlic, olive oil, oregano, thyme, salt, and pepper until combined.

Pour the marinade over the chicken cubes and toss to coat. Cover the bowl and let marinate in the refrigerator for at least 30 minutes.

Line a baking sheet with parchment paper. Arrange the chicken cubes on the baking sheet and bake for 15 minutes or until cooked through. Serve warm.
