- 1 whole chicken, giblets removed
- 4 quarts of cold water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 2 bay leaves
Put the chicken into a large stockpot or Dutch oven and add the cold water. Bring the water to a boil over high heat, then reduce the heat to low and simmer for one hour. Skim off any foam that rises to the top during this time.
