This Grilled Chicken Pasta Salad is a quick and easy summer favorite! It’s loaded with grilled chicken, tomatoes, cucumbers, peppers and your favorite pasta. This meal is perfect for a picnic, potluck or just an easy weeknight dinner option.
- 1 pound dry rotini pasta
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 teaspoons sugar
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 boneless skinless chicken breasts, grilled and cut into cubes
- 1 (14.5 ounce) can diced tomatoes, drained
- 2 cups chopped cucumber
- 2 cups chopped bell peppers (any color)
In a large pot of boiling salted water, cook the rotini according to package instructions. Drain, rinse with cold water and set aside.
In a medium bowl whisk together olive oil, red wine vinegar, sugar, garlic, salt and pepper. Set aside.
In a large bowl combine cooked pasta, chicken cubes, tomatoes, cucumber and bell peppers.
Pour dressing over the salad and toss until evenly coated. Serve immediately or cover and refrigerate until ready to serve.
