- 2 tablespoons butter
- 1 shallot, minced
- 2 cloves garlic, minced
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 3 tablespoons Roquefort cheese, crumbled
- Salt and pepper to taste
- 4 chicken breasts, boneless and skinless
Heat the butter in a large skillet over medium-high heat. Add the shallot and garlic and sauté until softened, about 5 minutes. Pour in the wine and simmer for 2 minutes. Add the cream and simmer for another 3 minutes. Add the Roquefort cheese, stirring until melted. Season with salt and pepper to taste.
Preheat a grill to high heat. Grill the chicken breasts for 7 minutes per side, or until cooked through. Serve with the Roquefort sauce spooned over the top.
