- 1 whole chicken, about 3 pounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat oven to 350°F (175°C). Place the chicken in a roasting pan. Drizzle with olive oil and rub over the entire chicken. In a small bowl, mix together garlic powder, oregano, thyme, paprika, salt and pepper. Sprinkle over the chicken and rub into the skin. Roast in preheated oven for 1 hour to 1 hour 15 minutes or until the internal temperature reaches 165°F (74°C). Remove from oven and let rest for 10 minutes before carving.
