Grandma’s Chicken Fricassée is a classic French dish that makes for a delicious dinner. This recipe calls for chicken, mushrooms, and a white wine sauce. Serve with mashed potatoes or steamed vegetables for a complete meal.
- 4 boneless, skinless chicken breasts
- 2 tablespoons of olive oil
- ½ cup of white mushrooms, sliced
- 1 cup of dry white wine
- 1 teaspoon of cornstarch
- 1 tablespoon of fresh parsley, chopped (optional)
Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until lightly browned on both sides. Remove the chicken from the pan and set aside.
Add the mushrooms to the skillet and cook until lightly browned. Add the wine to the pan and bring to a boil. Reduce the heat to low and simmer until the sauce has thickened, about 5 minutes.
Mix together the cornstarch with 2 tablespoons of cold water in a small bowl until combined. Add this mixture to the pan and stir until combined. Return the chicken to the pan and simmer for 3-4 minutes or until cooked through.
Serve with mashed potatoes or steamed vegetables, sprinkled with fresh parsley if desired.
