Grandma’s Chicken Cocotte

This simple yet delicious recipe is a classic in many households. With only a few ingredients, it’s a great meal to whip up in no time.

  • 1 whole chicken
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 tablespoons of chopped fresh parsley
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste

Preheat the oven to 350°F (175°C). Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 3 minutes. Place the chicken in an oven-proof baking dish or roasting pan. Arrange the vegetables around the chicken and sprinkle with parsley, thyme, salt and pepper. Bake for 1 hour or until the vegetables are tender and the chicken is cooked through.
