A delicious treat, Grandma’s Cake Verrines are the perfect way to enjoy a classic cake recipe with a modern twist. To make these delightful verrines, start by preparing the cake batter. Beat together 3 eggs and 1 cup of sugar until light and fluffy. Add in 1/2 cup of butter, 1 teaspoon of baking powder, 2 cups of flour and 1/2 cup of milk. Mix until everything is combined and pour into a greased 9-inch round cake pan.
Bake in the preheated oven at 350°F for 25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into cubes.
Meanwhile, prepare the cream filling by beating together 4 ounces of softened cream cheese, 4 tablespoons of butter, 2 tablespoons of honey, 1 teaspoon of vanilla extract and 1/4 cup of powdered sugar until smooth and creamy. Set aside.
To assemble the verrines, layer the cake cubes, cream filling and fresh fruit (such as strawberries or blueberries) in individual glasses. Top with more fresh fruit and a drizzle of honey before serving.
