This recipe is a festive twist on a classic jelly recipe. The warming spices of gingerbread bring a unique flavor to the sweet apples, making this the perfect holiday treat.
- 4 cups apple juice
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 3 1/2 cups granulated sugar
- 3 ounces liquid pectin
In a large saucepan, combine the apple juice, lemon juice, cinnamon, ginger, and allspice. Bring to a boil over medium-high heat. Reduce heat and simmer for 10 minutes. Add the sugar and stir until dissolved. Increase heat to medium-high and bring back to a boil. Stir in the pectin and return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from heat and skim off any foam that forms on top.
Pour into sterilized jars and seal tightly with lids. Allow to cool completely before storing in a cool, dark place.
