Exotic Winter Vegetable Soup (with or without Companion)

This comforting winter soup is made up of a variety of vegetables and herbs that combine to make a delicious, healthy meal. Whether you’re using your Companion or not, this soup is sure to please!

  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 red pepper, diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and cubed
  • 1 zucchini, cubed
  • 1 can of coconut milk
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
    • Heat 2 tablespoons of oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened. Add the carrots, pepper, celery, potatoes and zucchini. Cook for an additional 5 minutes. Pour in the coconut milk and vegetable broth and bring to a boil. Reduce heat to low and simmer for 15-20 minutes or until vegetables are tender.

      If using your Companion cook at 100°C for 10 minutes then puree with a hand blender until smooth. If not using your Companion you may use an immersion blender to puree the soup until it reaches the desired consistency.

      Stir in the cumin, salt and pepper and adjust seasonings if necessary. Serve immediately.
