Easy Olive Chicken Tajine Recipe

This easy olive chicken tajine is a simple and delicious Moroccan dish, perfect for any night of the week. It combines juicy chicken with the bright flavors of olives, spices, and herbs for a meal that is sure to please.


  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 1 pound boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup green olives, pitted and halved
  • 1/4 cup fresh parsley, chopped


  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.< li >Add the ginger, cumin, paprika, turmeric, salt and pepper. Cook for another minute or two until fragrant.< li >Add the chicken and cook until golden brown on all sides, about 10 minutes.< li >Add the olives and cook for another 5 minutes or so until the chicken is cooked through.< li >Garnish with chopped parsley before serving.
