This delicious cake is the perfect appetizer for a summer gathering. Easy to make and great to look at, it’s sure to be a hit with your guests!
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 3 eggs
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 2 cups grated courgettes (zucchini)
- 3/4 cup chopped walnuts
- 1/2 cup crumbled goat cheese
Preheat oven to 180°C (350°F). Grease an 8-inch round cake pan and set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, whisk together the olive oil, eggs, honey, and vanilla extract until combined. Gradually add the dry ingredients to the wet ingredients and stir until just combined; do not overmix.
Gently fold in the grated courgettes, walnuts and goat cheese. Pour the batter into the prepared cake pan and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool before serving.
