  • 2 cups chopped carrots
  • 1 cup diced celery
  • 1 cup diced onion

  • 1 teaspoon dried thyme

  • 1 cup cooked chestnuts, chopped into small pieces
  • 1 cup panko bread crumbs

  4. In a small bowl, combine the panko bread crumbs with 1 tablespoon of olive oil. Sprinkle over the vegetables.
  5. Bake in preheated oven for 20-25 minutes or until vegetables are tender.
