Curry de légumes

This delicious curry is an easy and flavorful way to incorporate vegetables into your diet. The combination of spices give the dish a fragrant aroma, while the vegetables provide a nutritious boost.

  • 1 tablespoon of oil
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of chili powder
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup of peas
  • 1 cup of coconut milk
  • Salt and pepper to taste

Heat the oil in a large saucepan over medium heat. Add the garlic and onion and cook until softened, about 5 minutes. Add the cumin, coriander, turmeric, and chili powder and cook for 1 minute more. Add the carrots, bell pepper, and peas and cook for 5 minutes more. Pour in the coconut milk and bring to a simmer. Reduce heat to low and simmer for 10 minutes or until vegetables are tender. Season with salt and pepper to taste. Serve hot over rice or with naan.
