- 1 tablespoon of oil
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander

- 2 carrots, chopped
- 1 red bell pepper, chopped

- 1 cup of coconut milk
