- 4 tablespoons unsalted butter
- 1 medium onion, chopped
- 1 large carrot, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 6 cups chicken stock
- 1/2 cup heavy cream
- 2 cups cooked and shredded chicken
- Salt and pepper to taste
Heat the butter in a large pot over medium heat. Add the onion, carrot, celery and garlic. Cook until softened, about 5 minutes.
Sprinkle the flour over the vegetables and cook for 1 minute more. Gradually stir in the chicken stock and bring to a boil. Reduce heat to low and simmer for 15 minutes.
