Couscous Poulet au Curry

This delicious couscous with chicken and curry is an easy and quick dish to make. It’s perfect for a mid-week meal or as a side dish. The flavors of the curry and couscous come together perfectly for a flavorful result.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 chicken breasts, diced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 3 cups chicken broth
  • 2 cups uncooked couscous

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened. Add the chicken and cook until golden brown. Stir in the curry powder, cumin, turmeric, ginger, cayenne pepper, salt and pepper.

Pour in the chicken broth and bring to a boil. Add the couscous and stir to combine. Cover the skillet and reduce heat to low. Simmer for 10 minutes or until all of the liquid has been absorbed.

Fluff with a fork before serving.
