Couronne de légumes for Christmas

Celebrate the holidays with a delicious crown of vegetables! This festive dish is a great way to add some color and flavor to your holiday table. It’s easy to make, and packed with nutrition. You can also use whatever vegetables you have on hand for this dish, making it a great way to use up any leftovers from the holidays.


  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1/4 cup olive oil
  • Salt and pepper, to taste


  1. Preheat oven to 375°F.
  2. In a large bowl, combine onion, garlic, carrots, bell pepper, zucchini and mushrooms. Drizzle with olive oil and season with salt and pepper.
  3. On a large baking sheet lined with parchment paper, arrange the vegetable mixture in a circle. Bake for 25 minutes or until vegetables are tender.
  4. Remove from oven and enjoy!
