The Christmas Log is a classic French dessert. This version of the recipe adds a tropical twist to the traditional recipe with exotic fruits for a refreshing and fruity flavor.
- 4 eggs
- 1/2 cup sugar
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons melted butter
Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, beat together eggs and sugar until light and fluffy. Add in the flour, baking powder, and salt. Mix until just combined. Finally, add melted butter and mix until well blended.
Pour batter into prepared pan and spread evenly. Bake for 15-20 minutes or until golden brown.
Meanwhile, prepare the filling:
- 1 (15 ounce) can mangoes, drained
- 2 bananas, peeled and sliced
- 1/4 cup pineapple juice
In a medium bowl, combine mangoes, bananas, and pineapple juice. Mix until well blended.
Once the cake is baked, remove from oven and let cool completely. Spread filling onto cooled cake and roll up into a log shape. Refrigerate for at least 1 hour before serving.
