- 3 egg whites
- 1/4 teaspoon cream of tartar
- 3/4 cup sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup heavy cream
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons cornstarch
- 2 cups milk
Preheat oven to 350 degrees F. Beat egg whites with cream of tartar until stiff peaks form. Gradually add in the sugar, one tablespoon at a time, while continuing to beat. Add vanilla extract and beat until combined. Spread meringue onto prepared baking sheet and bake for 15 minutes, or until golden brown. Allow to cool completely.
Meanwhile, combine heavy cream, cinnamon, nutmeg, cornstarch, and milk in a medium saucepan. Place over medium heat and whisk constantly until mixture thickens (about 10 minutes). Remove from heat and set aside to cool.
Once both meringue and custard have cooled completely, assemble cake by layering meringue with custard in a 9-inch pie dish. Refrigerate for at least 1 hour before serving.
