Chicken with Potatoes and Chorizo

This easy dish is packed with flavor and makes for a great family meal. With chicken, potatoes, and chorizo, it’s sure to please everyone at the table.

  • 4 chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 potatoes, peeled and cubed
  • 1/2 cup chorizo sausage, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preheat oven to 375°F (190°C). In a large skillet over medium heat, add the chicken breasts and cook until lightly browned on each side. Remove the chicken from the skillet and set aside.

In the same skillet, add the onion, garlic, bell peppers, potatoes, chorizo sausage, smoked paprika, oregano, salt and pepper. Cook until vegetables are softened and chorizo is lightly browned. Add the chicken back in and mix everything together.

Transfer the mixture to an oven-safe baking dish. Bake in preheated oven for 30 minutes or until chicken is cooked through.
