This Mediterranean-inspired dish of chicken with peppers and green olives is a delicious combination of flavors. The juicy chicken is complemented by the sweet bell peppers, salty olives and fragrant garlic. Serve it with a side of crusty bread for a complete meal.
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 2 red bell peppers, sliced into strips
- 1/2 cup green olives, pitted and halved
- salt and pepper to taste
Preheat oven to 350°F (175°C). Heat olive oil in a large skillet over medium heat. Add chicken breasts to the skillet and cook until lightly browned on both sides, about 5 minutes per side. Transfer chicken to a baking dish.
Add garlic, bell peppers, olives, salt and pepper to the skillet. Cook until vegetables are tender-crisp, about 5 minutes. Spoon vegetables over the chicken breasts in the baking dish.
