This classic Chicken with Peanuts dish is a great way to end a long day of debriefings. It’s easy to make and combines the sweet and savory flavors of the peanuts and chicken in one delicious meal!
- 1 lb chicken breast, cubed
- 3 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup roasted, salted peanuts
- 1/4 teaspoon ground ginger
- Salt and pepper to taste
In a large skillet, heat the olive oil over medium-high heat. Add the chicken cubes and cook until lightly browned. Add the onions, garlic, peanuts, ginger, salt and pepper. Cook for 5 minutes or until the onions are softened.
Serve hot over cooked white rice.
