Chicken with Olives and Candied Lemon in a Casserole

This delicious chicken dish is enriched with olives and candied lemon for a truly amazing flavor. It’s easy to make and perfect for family meals.

  • 1 whole chicken, cut into pieces
  • 1/2 cup black olives
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground pepper
  • 1 lemon, thinly sliced

Preheat the oven to 350°F (180°C). Place the chicken pieces in an ovenproof casserole dish. Scatter the olives over the chicken. In a small bowl, mix together the olive oil, garlic, oregano, cumin, salt, and pepper. Pour this mixture over the chicken and olives. Arrange the lemon slices on top of the chicken.

Cover with aluminum foil and bake for 45 minutes or until the chicken is cooked through. Serve hot.
