This easy and delicious chicken dish is a great way to add a burst of citrus flavour to your dinner. The combination of juicy clementines and garlic creates a unique and tasty sauce that pairs perfectly with the chicken.
- 3 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 cloves garlic, minced
- 2 clementines, peeled and sliced
- 1/4 cup white wine
- 1 tablespoon chopped fresh parsley
Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
Add the garlic to the skillet and cook until fragrant, about 1 minute. Add the clementines slices and cook for an additional 2 minutes. Add the white wine to deglaze the pan. Return the chicken to the skillet and simmer for 8-10 minutes or until cooked through.
Remove from heat, sprinkle with fresh parsley and serve hot.
